Ingredients
125g self-raising flour
125g caster sugar
1/4 teaspoon bicarbonate of soda
125g (soft) unsalted butter
2 large free-range eggs
1 1/2 tablespoon milk
3 tsp cinnamon
Method
1. Sieve the sugar, flour, cinnamon and bicarbonate of soda together and then add the butter and eggs. Mix the ingredients on a low speed until combined, then put on to high speed for a minute.
2. Once it has had a minute keep mixing while slowly adding the milk. Give it one last mix until smooth.
3. Put the mixture into cupcake tins then pop them into the oven at 170 degrees for 22 mins.
4. When the cupcakes have cooled decorate them with your favourite frosting.
This simple recipe is absolutely delicious. Cinnamon is definitely one of my favourite spices.
