Chole is a great Indian chickpea dish that is wonderful with bread like bathura or chapatti.
For 4 people
Ingredients
400g tin Chick Peas
4 Tbsp Vegetable oil
1 Tbsp Ginger paste
1 Tbsp Garlic Paste
1 Tbsp Ground Turmeric
1 Tbsp Coriander Powder
1 Tbsp Cumin Powder
1 Cinnamon stick
2 Bay leaves
1 Tbsp Garam Masala
1 Tbsp Green Chilli
Two finely chopped onions
3 large chopped fresh tomatoes
Sea salt (to taste)
Fresh coriander (a Few chopped leaves)
2 Teabags
Method
Heat the oil in a heavy-based saucepan, at medium heat, add cinnamon stick, add onions and fry until golden brown and soft, add garlic and ginger paste, fry for a minute or two, add tomatoes and give a good stir and fry until mixed properly. Add chickpeas fry for 5 minutes, add water enough to cover the chickpeas. Add turmeric, coriander and cumin powder and two tea bags. (take out tea bags after a minute or so ) and cook over low heat until the sauce thickens. Add Garam Masala and season to taste.
Serve the chole (sprinkled with coriander, chopped green chilli and chopped onions - and maybe a little chaat masala) along with some tamarind sauce and yoghurt.
