Nutmeg Cookies

Sorry I haven't posted for a while but here is a fantastic, chewy cookie recipe with a seasonal flavour twist. I used this recipe for the first batch of Rishi's Kitchen Cookie Subscription that I am doing for my Grandparents. Here it is:


INGREDIENTS


255g plain wholemeal flour

2 tsp baking powder

1/2 tsp salt

1 1/2 tsp nutmeg, freshly grated

95g unsalted butter

255g dark brown sugar

1 large egg

1 tsp vanilla extract


Step One

Preheat your oven to 180 degs Celsius or 350 degs Fahrenheit.


Step Two

Mix together the flour, baking powder and nutmeg.


Step Three

In another bowl cream together the sugar and butter till fluffy, then add the eggs and whisk for another minute. Next add the vanilla and mix again.


Step Four

Add the dry mixture to the wet mixture with care and mix till you form a dough.


Step Five

Form your dough into a long log then rap it in cling film and pop it into the fridge for ten minutes.


Step Six

Split your dough into 24 pieces then roll each one into a ball. Put six balls at a time into the oven for ten minutes
