Recipe for a Kashmiri dish called Tabaq Maz (thanks to my Grandpa for the recipe)
Ingredients
Lamb ribs cut in medium size chunks 1 kg
Milk 250 ml
Fennel powder 1 tbsp
Ginger paste 1 tbsp
Turmeric powder 1/2 tsp
Cinnamon stick 1 inch long
Black cardamom, crushed 3
Green cardamom, crushed 4
Cloves 2
Ghee 3 tbsp
Method
In a large pan put meat, add milk and some water to cover the meat. Add all the condiments and cook on medium heat until the meat is just soft, make sure not to overcook, meat should not fall of the bone .
Put the ghee in a frying pan and fry the cooked rib pieces in batches until they are just brown.
Serve immediately as a very naughty but very tasty starter.
